St Patrick’s Day Pasta

 

A favourite, and very green, lunch we often have.

– 250g Gluten-Free Pasta (we use Riztopia Spirals)
– 1 Jar of Pesto (many are GF)
– A dollop of double cream
– 125g Pancetta Cubes (or pieces of streaky bacon)

– Boil up the pasta as per it’s instructions
– Warm the pesto and cream in a saucepan, stir well
– Fry the pancetta until it is golden
– When the pasta is ready drain and gently mix the whole lot together

Add pepper and cheese to taste.
